I'm going fishing in the Gulf for yellowfin and blackfin tuna this weekend (rack the Trolls), we've heard that they have been tearing them up lately, we may come back with several hundred pounds of filets.
Anyway, I have some recipes, but am always interested in others, any of you chefs have a recipe you're proud of?

open can of tuna and empty contents into a bowl. mix in mayo, diced hard boiled eggs, diced pickles and onions. cover with cling wrap and let sit in sun for a day or six before eating.

for a tuna steak---glaze with good olive oil salt peppa and flash fry on white hot grill both sides..
serve with trendy mango or papya sauce
ps saw some yellowfin tuna skin divin in Belize-----conch and snapper where dinner of choice this time o year

Olive oil? A little thin, but maybe in a pinch

Make a marinade of equal parts white wine and soy sauce. Add minced shallots. Because the soy, for some reason soaks in really quick, I only soak tuna for 15 mins. Grill tuna to mr,med or at least leave some pink. Garnish this with Vidalia onion rings sliced very thin and coated with a mix of tabasco and flour. Deep fry onion rings and top tuna with them.

Heat up a skillet till red hot sear tuna fillets on both sides for about 2 min then serve with
missjo's patented avacado sauce
mix together one avacoda a lil light mayonaise fresh dill, fresh lemon juice,some finelt chopped spring onions a lil rock salt & some cracked black pepper

Marinate thick tuna steaks in a mixture of rice wine, peanut oil, soy sauce, a little wasabe, a dash of powdered ginger and a couple dashes of dark brown sesame oil.
Sear the steaks on the grill or very hot skillet, leaving the centers raw or close to raw. If this doesn't appeal to you cook them medium rare. The worst thing you can do with these is overcook them.
Serve with a dip of soy sauce and wasabe.
